Recipe: Smokin' pear salad

The cook time for the chicken may vary, depending on the size of the chicken breasts and the heat of the coals. Cook chicken to an internal temperature of 170 degrees to avoid risk of bacteria and foodborne illness.

INGREDIENTS

4 boneless, skinless chicken breasts

Salt, pepper, granulated garlic to taste

1 pear, firm but ripe

Dressing:

1 big garlic clove, finely minced

1/2 cup olive oil

1/3 cup balsamic vinegar

1/4 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon white sugar

1 medium red onion, very thinly sliced

Salad:

1 large head butter lettuce, washed and torn

1 cup crumbled blue cheese

1 cup candied pecans or walnuts

1/4 cup dried cranberries

Garlic bread:

1 loaf French bread

1/2 cup butter

4 cloves garlic, finely minced

INSTRUCTIONS

Clean and dry chicken breasts. Season chicken to taste with salt, pepper and granulated garlic. Set aside.

Slice pear in half and core.

If making garlic bread, slice loaf in half the long way, melt butter and add minced garlic, then brush garlic butter mixture onto bread.

Place chicken, pears face down, and garlic bread crust on a hot grill. Cook chicken until firm, juices run clear and internal temperature reaches 170 degrees.

Cook pears for 1 minute, just until grill marks show.

Cook garlic bread until grill marks show, about 5 minutes, then flip and cook 2 minutes butter side down.

While the above ingredients are cooking, prepare dressing and salad.

Salad dressing: Mix minced garlic, olive oil, balsamic vinegar, salt, pepper, and sugar in a bowl. Whisk with fork until emulsified. Place sliced red onion into dressing bowl.

Place lettuce in a large bowl. Add blue cheese, nuts and cranberries. Slice the grilled pear into 1/8-inch thick slices and add to salad.

Remove chicken from grill and slice thinly. Add dressing with onions to salad and toss. Top salad with chicken. Slice garlic bread and serve on the side.

This coffee fruit bread gets a really nice creamy texture from the yogurt and pear puree it has. Try this bread fresh from the oven but if you like putting it in the refrigerator first before eating, it taste really good as well.

Ingredients:
2 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 1/2 cup (1 stick) unsalted butter, softened 1 cup sugar 1/2 cup firmly packed light brown sugar 2 large eggs, lightly beaten 1 teaspoon pure vanilla extract 1 1/4 cups pear puree (about 4 very ripe pears, peeled, cored and pureed in a food processor) 1/4 cup plain yogurt 4 teaspoons ground coffee (regular grind) 1 teaspoon ground cardamom

Turkish Coffee Pear Bread Procedure:

Preheat the oven to 325 degrees F, with a rack in the middle. Grease and flour 9-by-5inch loaf pan. Sift together the flour, baking soda and salt into a small bowl; set aside. In a large bowl, with an electric mixer on medium speed, cream together the butter and sugars until well blended, about 2 minutes. With the mixer running, add the eggs and vanilla and blend thoroughly, about a minute. Add the pear puree and yogurt and mix thoroughly. With the mixer off, sprinkle the ground coffee and cardamom over the batter. Pour the flour mixture over the top and, on low speed, mix it in just until combined. Pour the batter into the pan and bake for 1 hour and 5 minutes, or until a toothpick inserted in the center comes out clean. Cool for 10 minutes in the pan. Invert the cake onto a wire rack and turn right side up on the rack to finish cooling. When completely cool, slice thinly.

Yield: One 9-by-5-ince loaf
