Restaurant Profiles: The Mint

The Mint may be a new restaurant for West Side Bethlehem, but owner Domenic Lombardo is not. Lombardo, son of restaurateur Stefano Lombardo — the namesake behind Stefano’s Restaurant in Bethlehem, Stefano’s Sicilian Grille, and Sweet Basil — says customers come into his restaurant remembering him from his days in the playpen of his father’s first shop on Second Avenue, Stefano’s Pizzeria. That was 1980. Today, Lombardo is bringing his gastronomic upbringing and culinary school training to The Mint, a gastropub set in a former bank building on Broad Street that opened June 13.

The flavor: The menu is all about contemporary comfort foods. Try a pork belly BLT, Vietnamese-style pulled pork or truffled mac and cheese. But Lombardo hits his stride on the drink menu. In addition to lists of wine, martinis and other cocktails, The Mint boasts an extensive beer list, 90 percent of which is American craft beer.

Ambience: “Soho meets West Coast,” Lombardo says. The large windows, vibrant purple chairs and lime green accents brighten the room. Stefano wants people the room to feel inviting, with a retro feel. When the weather is nice, an outdoor patio offers seating. On hot, stormy days, take refuge in the cool leather lounge sofas set off the side of the restaurant’s bar. The former drive thru teller windows from the location’s former days as a bank have been closed off for a drinking and smoking patio.
Tradition: “He’s worried and excited about straying from the Italian concept,” Lombardo says of his dad’s reaction to the departure from the bread and butter cooking styles that have made the family a Lehigh Valley fixture for nearly 30 years. “But he’s impressed with how well it’s been received.”

Know the lingo: “We’re trying to develop a subculture. The menu is as you see it, but there are phrases you can say to get other combinations,” he says. Say “Add juevo” if you want your burger to come out with a fried egg and a runny yolk (a $2 up charge) or order it “Animal Style” for a layer of premise-roasted pork belly, bacon, fried egg on top of two burger patties with 3K dressing (a $3-$4 up charge).
